This visual, olfactory and gustatory tour takes visitors to the heart of the sugar-making process, from cane reception to sugar crystals, following the various stages: shredding, pressing, purification, filtering, reheating, clarification, evaporation, cooking and crystallization.

Réunion currently has two sugar factories. The Gol plant in Saint-Louis, established in 1817, and the Bois Rouge plant in Saint André. The Gol plant also has a thermal power station that generates electricity from the waste generated by sugarcane processing (bagasse).
